Yacon - Smallanthus sonchifolius

Also known as the Bolivian Sunroot, this high-yielding unusual vegetable is scarcely found in stores and markets, but can easily be grown at home. The delicious root is surprisingly sweet, juicy and crisp and is particularly usdeful as part of a low-sugar substitute. Plant in spring and harvest when foliage, has died back in December. Each 9cm pot plant supplied can produce up to 5kg of edible vegetables.
